Monkeysoup Favorites Part 2…

Okay, so I think Thursday is going to just be recipe day. 

For one thing, today I have nothing for you.  No wit, no snark, no funny Meaisms.  Nothing, nada, zip.  I think that my brains are being sucked out of my ear today, due to having a Justin Bieber song totally stuck in my head.  My brains, they are a melting.  How many times can you sing in your head, “Baby, baby, baby….” without going completely off the rocker crazy.

So there you go.  I’m losing it, and I’m not funny because my brain is being melted by JB.

Monkey’s Love Banana Bread

1/2 c vegetable oil

1 c sugar

2 eggs slightly beaten (like my brain)

2 c flour

3 tablespoons of milk

3 ripe bananas

1 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon vanilla

Pre-heat oven to 350.  Beat oil and sugar together, add eggs and banana pulp.  Beat together.  Add dry sifted (the recipe says sifted, I have never done it.) ingredients.  Add milk & vanilla.  Pour into greased and floured loaf pan.  Bakes about 1 hour. 

The top will be a little gooey.  That’s the good part.  Also, you can add chocolate chips to this (my sister), or my preference is blueberries.  If you add either, it’s best to coat them in flour before adding to the batter.  The flour coating makes them float in the batter.  No sinkers.

Best eaten the next day.  Also, best to take it out of the pan about 20 minutes or so after baking and let it cool on a baking rack.  Yummy.



Peach Upside Down Cake

(This is one of my Nana’s.)

1 can of sliced cling peaches

1 cup brown sugar

4 tablespoons of butter

1/4 c of shortening (Crisco, regular)

3/4 c sugar

1 egg

1 1/2 c flour

2 tablespoons baking powder

1/4 teaspoon of salt

2/3 c milk

Pre-heat oven to 350.  Mix brown sugar and melted butter in the bottom of a 9″ round cake pan.  Arrange the sliced peaches in the brown sugar/butter combination until the bottom of the pan is covered.  Mix shortening, sugar, egg, flour, baking powder, salt and milk in a bowl.  Add some of the peach juice for flavor.  The batter will be thick.  Spread batter on top of the brown sugar/butter/ peach mixture.  Bake for about 45 minutes, or until a toothpick comes out clean.

Let sit for 10 minutes, and then flip cake onto a round plate.

It’s important to flip the cake while it is still warm.  If you do not, it will stick, and not come out.

Super yummy warm with vanilla ice cream.  


So that’s all for today.  Hopefully I will have this Justin Bieber earworm gone by tomorrow, and I can give you something interesting.  If I don’t post something tomorrow, I may have checked myself into the looney bin.
